When you envision the perfect bowl of steamy, delicious soup, what comes to mind? The recipes in this book will have the number of servings, preparation time and total time from start to finish. Your time may vary if you are just starting to learn to cook. There is also a nutritional analysis with each recipe calculated using the USDA database, Version SR-24. A nutritional analysis is very important if you have any diet restrictions or if you are trying to lose weight.
Cooking Tips and Techniques have been included to help new cooks get their bearings in the kitchen. I hope seasoned cooks can pick up a useful tidbit or two also.

Have you ever opened a cookbook and felt an instant connection to the person behind the recipes? I felt as if I had stepped into the kitchen of this author...like I was comin over for a cup of warm soup on a rainy day. I loved the style and could feel the author's heart behind every recipe and every instruction. I think this is especially important when it comes to a soup recipe book as I have the tendency to equate it with the food that cures all - illness, cold weather and even heartache on a certain day. I can't wait to start with some of these recipes that are definitely new to me. I'll be starting with the Rustic Black Bean Chili and soon after that the Chicken and Dumplings. Yummy! Found this for free, very happy with the recipes and the clearly written tips to make each soup perfect! Nutrition information is a nice addition, basic information on topics like health /safety in the kitchen and the basics to cook beans are much appreciated. As others have stated in reviews, the author's voice is there gently guiding you in the recipes and other information. Love the use of real ingredients, too many cookbooks with processed junk. Selectively choosing fresh, canned and frozen products that are minimally processed ( such as canned tomatoes or frozen greens when fresh is not in season) allows the reader to make choices that are nutritionally sound as well as budget friendly.
I've been getting into cooking this year with cookbooks on my . I love soup and salad, but usually buy them prepared, so I'm trying to reduce my food budget. This book makes it so easy to make soups by preparing a lot of the ingredients ahead of time. For instance, dried beans are cheaper than canned and the author provides an easy recipe for pinto beans, chicken stock and cornbread that she uses in her soups. I can't wait to make the Blue Cheese and Vegetable soup; never heard of this before.
I found the salad section wonderful; these are salads I want to eat. My mother used to make a pea salad and this recipe looks a lot like it, so I'll be making that first. There are a lot of tips in this book; good buy for everyone, especially those new cooks like me.
I love having fresh dinners for the family - and it gets so busy, especially at this time of year. I picked up this cookbook because I enjoy Katherine's other books. It has the same quality and humor that I've come to expect.
What did I like about this cookbook?
- She emphasizes creating soups from scratch AND freezing stocks and the basics so it's quick to create new soups. I love her economy in terms of cooking a big batch of starter and freezing some of it for later.
- She un-apologetically uses bacon drippings (while giving options to do without). That adds a delightful taste to the soups.
- She includes nutritional information
- She has real, interesting southern cooking which tastes great!
I enjoyed this cookbook.
This is a fabulous recipe book! I absolutely love the way the author makes soup-making easy! The idea of having an entire section called 'the basics' that showed me how to make and freeze 'building blocks' for soups and stews, is just brilliant. It means that I can quickly and easily make truly 'homemade' soup for my family whenever I want to! And seriously, what is better than that???
The book includes recipes for classics like Chicken Noodle and Minestrone, but also recipes for soups/stews such as Navy Been and Greens, Oyster Stew and Lethal Weapon Chili. Also included in this cookbook are some wonderful salad recipes. To make sure I get it right, she kindly included cooking tips and techniques too.
This is a terrific cookbook and I am very glad I own it! I will be using it often!
I bought this book because I have read that adding some broth or soup (healthy) and salad to my diet before a main meal, is not only nutritious, but helps manage your appetite, and as such goes some way to stop you overeating. I have been trying this theory out and IMO it does work, well for me anyway.
But I was quickly running out of soup and salad ideas, especially soups that I could freeze, because I really do not have the time to cook up a broth every day.
I was very impressed with the book. There is a great choice to choose from. But more than that, I love it when you can read and feel passion about food in a cook book. Sounds obvious but I sometimes get the feel that people just throw together recipes as part of a conveyor belt 9-5 job.
Not so with Katherine the author. She knows her soups and salads, but really wants to help you make them 'as good as it gets' if you know what I mean.
The tips section for each recipe is useful, but the tips section at the back of the book gives the book another great little extra, and there are some gems in there (well for me anyway).
Most of the recipes are within my 'skill' level, the few that look a bit more complicated I will try as the author promises that I will be well rewarded for my efforts. Great book, thank you.
"I'll Have the Soup and Salad" is a labor of love from a woman who knows how to cook. I particularly like the personal stories included with some of the recipes. The cook times with prep and total times, tips for serving or storing and nutrition facts are a real plus missing in a lot of cook books. The format of the recipes with numbered procedure steps makes it super easy to follow the recipe preparation.
The Italian Stew, Minestrone Soup and Navy Beans with Greens Soup recipes looked really good to me. There is a great section on Goodies to add to Salad. An excellent Basic Vinaigrette Dressing Recipe with suggestions to spice it up. The cooking tips section includes an excellent tip on cleaning leeks which are difficult to clean properly. I cook and am always learning new techniques and tips. Not being the most organized guy, the work area organization tips will be especially useful to me.
Whether you are an experienced cook or just beginning, there is something for everyone in this book. I highly recommend it.
